Lemon, Rosemary (optional)
Preheat the oven to approx. 200 C.
Mix the bread crumbs and pesto together until you have a nice thick but still quite wet paste.
Put your chicken breasts or salmon on a piece of tin foil which will be big enough to wrap it in in loosely (you want quit e a bit of space between the chicken or salmon and the top of the tin-foil package).
Put a little bit of olive oil and a couple of peeled cloves of garlic around the meat, and put a nice thick layer of the pesto mix on top. Sprinkle of some Lemon zest and juice, and then grate a nice layer of parmesan over the top. Wrap uo the tin-foil and put the whole thing in the oven, on a baking tray. Ckeck the whole thing in about ten inutes, you'll be suprised how quickly it goes, and because the tin-foil retains the moisture the whole thing wil be very nice and succulent.
This recipe tastes great served on a bed of steamed spinach, with a side of roast baby potatoes, butternut squash and sweet potatoe.
