Dietary guidance: v
1 1/4 C. bran cereal (I use All Bran)
1 1/3 C. Yogurt (I use Colombo light, any flavor)
1 TB (or more) grated orange peel (I grate and use all the zest of one orange)
1/2 C. Orange Juice (I juice the orange & add more if necessary)
1/2 C. Honey
1/4 C. Melted Butter
1 C. Flour
1 C. Whole Wheat flour (I use 2 cups of white instead)
2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
1 C. of dried cranberries, or fresh or frozen coarsely chopped
1/2 c. Pecans (nutritional breakdown doesn't included this)
Preheat oven to 375F.(190C).
Spray muffin tins with non-stick cooking spray. Combine cereal and yogurt in bowl. Let stand 5 minutes.
Stir in egg, orange rind, orange juice, honey and butter.
Mix remaining ingredients except cranberries and nuts in large bowl.
Stir in cereal/juice/honey mixture and cranberries into dry mixture just until combined. (overmixing will toughen them)
Fill greased muffin cups.
Bake 25 min or until set and golden.
Cool on rack.
