1 1/2 lb. cooked medium prawns (fresh preferred)
1 large papaya. chopped
1 small red onion, finely sliced
2 sticks celery, finely sliced
2 tbsps. shredded fresh mint
1/2 cup oil
1/4 cup lime juice
2 tsps. finely grated fresh ginger
1 teaspoon organic sugar
For lime dressing , put the oil, lime juice, ginger and sugar in a samll bowl and whisk to combine. Season, to taste, with salt and freshly ground black pepper.
Add the lime dressing to the prawns and toss gently to coat the prawns. Add the papaya, onion, celery and fresh mint and gently toss to combine. Serve the salad at room temperature, or cover and refrigerate for up to 3 hours before serving. Can be served garnished with extra aprigs of fresh mint.
