duck salad with "confit"potatoes and marinated tomatoes

Ingredients

duck breast
p[otatoes
tomatoes
red onion
spinach
orange zest and juice
balsamic
salt pepper

Method

slice and boil potatoes
score and season and fry duck fat down on low heat so all the fat renderes out
marinate tomatoes and red onion in balsamic and olive oil and salt
when duck is done leave in a warm place to rest
fry potatoes in the fat,
when the done take em out and pour liquid from tomatoes in pan, add more balsamic, reduce a litle, add juice and some zest from one orange
reduce some more
make it look good on a plate
eat
