Chicken Jalfrezi

Ingredients

500 g chicken diced
1 red pepper chopped
1 large onion coarsely chopped
2 tbsp oil
2 tbsp yoghurt
1/2 cup chicken stock
1/2 package (200g) frozen spinach
3 cloves garlic (minced)
ginger
chillis
cumin
coriander
paprika
dried chilli powder
turmeric
garam masala
salt

Please note as with my other Indian recipes I don't use a specified amount of the listed spices I just add to taste but generally between 1.2 tsps

Method

1. Fry onions in oil until browned and add minced garlic

2. Add chicken and fry until cooked through and slightly browned

3. Add red pepper and spices

3. Add canned tomatoes and bring to a boil (add chicken stock whenever you need more liquid)

4. Add frozen spinach and more of the above listed spices to taste

5. Let simmer on low heat for 20 minutes

6. Mix in yohgurt and serve over rice or with naan
