Preparation time: 15 minutes
Cooking time: 12 minutes
Serves: Makes 30-36
Dietary guidance: v
1 cup butter
1 cup sugar
2 tsp vanilla extract
2 large egg yolks (reserve the white)
2 cups flour
Shape into small balls on ungreased non-stick mini muffin pan
Press balls down anything small and rounded (I have a special tool to do this, but you can you your index finger knuckle too, that works just as well)
Paint on the edges the reserved egg whites
Bake for 7 minutes at 350 degrees
Remove from oven and fill each cup with pie filing (cherry, raspberry, strawberry or whatever you'd like)
Bake for another 7 minutes or until golden brown at 350 degrees.
Cool and enjoy.
