MANGO COCONUT CHICKEN

Ingredients

4 cups (946 ml) torn or shredded cooked chicken
cup (125 ml) shredded sweetened coconut
1 tsp. (5 ml) fresh lemon juice
1 Tbsp. (15 ml) Dijon mustard
3 Tbsp. (45 ml) Major Grey mango chutney-
cup (125 ml) plain yogurt
cup (125 ml) coarsely chopped Italian parsley
tsp. (2 ml) sea salt
Pepper, black, to taste

Method

Put the shredded chicken pieces into a medium-sized bowl. Add the coconut, lemon, Dijon mustard and yogurt and toss until well combined. Add parsley and toss. Stir in sea salt and pepper.
