chorizo-style vegan sausages

Ingredients

this makes 4 sausages but doubles easily

1/2c cooked pinto beans, rinsed
1c veg broth
1 tbsp olive oil
2 tbsp soy sauce or bragg's
2 tbsp tomato paste
2 tsp lemon zest (optional in my opinion)
2 cloves garlic, minced
1 1/4c wheat gluten
1/4c nutritional yeast
1 tbsp smoked paprika
1 tsp crushed red pepper
1 tbsp rubbed sage
1 tsp oregano
1/4 tsp cayenne
other spices to taste, i like to add some cumin

Method

get a steamer up to boil. you can use a big pot with a colander or steamer basket.
mash beans until no whole beans are left. add other ingredients in order listed. divide into equal parts and wrap each in a sausage shape in tin foil. steam for 40 minutes. saute or grill as you please.
