Brown Rice and Blue Cheese Salad

I make a big batch of this and take it for lunch through the week. Apples could probably be used in place of the raisins, especially if being used right away.

Ingredients

I don't measure, so these are guesstimates

3 - 4 cups water
1.5 - 2 brown rice cups (ratio is 2:1, water: rice)
Salt

1/2 - 1 c blue cheese or gorgonzola, crumbled
1/2 - 1 c raisins
1-2 - 1 c walnuts, chopped
1-2 scallions, sliced thin

Salt and pepper to taste

Method

Boil rice in salted water in a covered pot for approx 1 hour, adding more water as necessary. (Follow cooking directions on package.)

Transfer rice to a mixing bowl, fluff with a fork and let cool.
Once cool, mix all other ingredients into rice.

Easy and delicious!
