20 bunches of elderflowers
1,5 l water
2 l sugar (or 1,7 kg)
2 lemons (or 4 lime)
50 g cictric acid
rinse flowerbunches after picking. put them in a large bucket or pot.
bring water and sugar to a boil and stir til solved. solve the acid in a small portion of the water and then add to the rest of it.
grate the peel of the lemons and squeeze them; keep juice and peel.
pour the syrup (water and sugar) over the flowers, add lemonjuice and -peel, stir a little.
store covered in a cool place for 5 days. drain through a cloth (saftsil) and bottle it up! if you wanna keep the bottles for long you could do a procedure with re-heating and adding conservatives, or you could just store it cold or freeze it. it will taste the same.
