7 minute frosting

This is Mike's favorite frosting, every year for his birthday I make this frosting to go on top of a pineapple box cake mix, add crushed pineapple to the top of the cake. It tastes like marshmellows, Mike always has to lick the pan

2 egg whites
3/4 cup sugar
1/3 cup light corn syrup
2 Tbsp water
1/4 tsp cream of tartar
1/4 tsp salt
1 tsp vanilla, reserve for later


Combine ingredients except vanilla in the top of a double boiler - use a top pan you can stick a hand mixer in and not worry about scratching it up. Cook over rapidly boiling water beating with a hand mixer until mixture stands in peaks. Remove from heat, add vanilla. Continue beating until thickens enough to spread.

After you frost the cake, keep in fridge.
