Lemon squares

Very good and very addictive especially if you like lemon, people at work ask for these all the time

Difficulty: Easy - for beginners


1 cup all purpose flour
1/2 cup of butter, softened (I melt mine in the microwave)
1/4 cup powdered sugar
1 cup sugar
2 tsp grated lemon zest/peel (I highly encourage this, and microplane graters you can even pick up at walmart nowadays do a fantastic job just watch the fingers)

2 Tbsp lemon juice, I just juice a whole lemon and throw it all in, it will take the zest and juice of one lemon per batch made

1/2 tsp baking powder
1/4 tsp salt
2 large eggs
additional powdered sugar for dusting


Heat oven to 350. In medium bowl mix the flour, butter and 1/4 cup powdered sugar with spoon. Press into an ungreased 8 or 9 inch square pan making sure to build up the sides 1/2 inch so the filling doesn't overflow. I double the batch and make in my 9x13 pan. Bake crust 20 minutes and remove from oven.

In medium bowl, stand mixer if you have it or hand mixer, beat remaining ingredients except the dusting sugar, mix on high speed for about 3 minutes or until light and fluffy. Pour over the hot crust. Bake 25-30 min or until no indentation remains when touched lightly in the center. Cool completely in pan on a wire rack about an hour. Dust with powdered sugar. For bars cut in rows of 5x5.
