Sweet Potato Quick Bread

Good any time of the year but especially in the fall. My Daddy likes to take some in his pocket to eat while he is sitting on a deer stand.

Ingredients

2-1/3 cups of sugar
2/3 cup water
2/3 cup oil
4 eggs
1 can drained mashed sweet potatoes (Bruces is my favorite)
1-1/2 tsp salt
1 tsp cinnamon
2 tsp baking soda
1/2 tsp baking powder
3-1/3 cup all purpose flour
1 cup chopped pecans, I have used walnuts too when out of pecans

Method

In large bowl combine sugar, water, oil, eggs and sweet potato. Add the dry ingredients together and mix with wet mixture little at a time. Add pecans. Pour into bread pans or bundt pan. Bake 350 for 60-70 minutes, just test for doneness like you would a cake.

I usually make 2 batches, it will freeze too for later. Dust some powdered sugar over the top.
