Mike's refrigerator fruit cake

More like Rice Krispie treats in texture than what you think when someone says the word fruitcake, very good. Keep in the fridge to store it.

Difficulty: Easy - for beginners

Cooking time:

Ingredients

1 box graham crackers
1 large pkg of marshmellows
1 bottle cherries drained
1 stick butter
1 box golden raisins
1 pkg pecans chopped, about 2 cups
1 pkg of white chocolate chips

Method

Crush crackers in bowl. Add raisins, nuts and cherries to cracker mixture. Melt butter and pour over marshmellows, put in microwave for 1-2 minutes until marshmellows melted like you do with RK treats. Add candy to marshmellow mix and pour over crackers. Butter or spray a bundt pan and pour mixture into it. Mash mix down into bundt pan. Put in freezer for 30 minutes to let cool down and then store in fridge. Depending on your freezer 30 minutes should be enough, might need longer, I usually wait a while to flip it onto the plate, just slice and serve. Keep stored in the fridge.
