Egg Cheese Sausage Bake using leftover hamburger or hot dog rolls

Dish for using left over hamburger or hot dog rolls. Tried this with more sausage & cheddar cheese instead of swiss. Was pretty good, but think next time I make it, I'll use less bread & tear that into even smaller pieces. DJ loved it & so did hubby.

Preparation time: ~ 1 hr
Cooking time: ~ 35 min.

Serves: 4 - 6


~ 1 T butter
3 split hamburger or hot dog rolls
1 T olive oil
1 small thinly sliced onion
3/4 lb sweet italian sausage with casing removed
6 lg eggs
1 c milk
1/2 t salt
1/4 t pepper
1-1/2 c (~ 6 oz) grated Swiss cheese


Preheat oven to 350 F
Butter 9x13 baking dish
Tear buns into large pieces & place in baking dish
Saute sliced onion in olive oil ~ 1 min. then add sausage meat & cook until done. Break meat up.

Whisk eggs, milk, salt & pepper together.
Stir in cooked sausage, onion & 1 c of cheese
Pour mixture over buns -- press with spatula or spoon to submerge the buns.
Sprinkle with remaining cheese.

Bake about 35 minutes until the eggs are set
