Wild Rice Soup

2 T butter
2 med. celery stalks -- sliced
1 med. carrot -- coarsely shredded
1/2 chopped onion
1 sm. chopped green onion
3 T flour
1 t salt
1/4 t pepper
1-1/2 c. cooked wild rice
~ 2 c. chicken broth
1 c. half & half
1/4 c. snipped fresh parsley
2 c. shredded chicken


Saute celery, carrot, onion & green pepper in butter until the celery is tender -- about 5 minutes.
Stir in flour, salt & pepper.
Add rice & chicken broth
Bring to a boil, reduce heat, cover & simmer for 15 minutes.
Stir in half & half, snipped parsley & shredded chicken. Heat until hot but NOT boiling.
