Florentine Cheese Crepes

1/4 cup of butter
1/4 cup of plain flour
10 oz milk
1 package (10 oz) of frozen spinach
1/2 cup of shredded parmesan cheese
1/2 cup of shredded swiss or chedder/swiss combination cheese
8-10 crepes - store bought or home made!


Melt butter, add flour to create a paste. Combine milk while over the heat stirring continuously until it's gently simmering and thickens. Add parmesan cheese and stir to combine. Remove from heat and take 1 cup of the mixture into another bowl and add the defrosted spinach and the swiss cheese. Spread into crepe and roll up and place in medium sized baking dish. Cover the crepese with the remaining cheese sauce, sprinkle with cheese shreds and some paprika. Bake at 350 for 25 mins.
