3 1/2 C. all purpose flour
1 C. whole wheat flour
3 tsp. baking soda
1/2 tsp. salt
2 tsp. ground cinnamon
3/4 C. butter/margarine, softened
2 C. white sugar
4-6 very ripe bananas, mashed
8 oz. sour cream
2 tsp. vanilla extract
1 C. chopped walnuts (optional)
1 C. fresh blueberries or Craisins (optional)
Heat oven to 300F. Grease four 7"x3" loaf pans. (I just coat them evenly with cooking spray.)
Mix the all dry ingredients (all-purpose flour, whole wheat flour, baking soda, salt, and cinnamon) in a large bowl and set aside.
In a medium bowl, cream the butter and sugar together. Mix in the eggs, mashed bananas, sour cream, and vanilla extract.
Pour all the wet ingredients into the large bowl of dry ingredients. Stir only until the dough is mixed, over-stirring will result in harder or "tough" banana bread. Fold in walnuts and blueberries/Craisins. Divide into the prepared pans.
Bake for 1 hour, until a toothpick inserted in the center comes out clean.
