COFFEE APPLE CAKE

Ingredients

2 c. unsifted flour
1 1/2 c. sugar
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/2 c. oil
2 eggs, beaten
1/4 c. brewed coffee
1 1/2 tsp. vanilla
2 1/2 c. sliced, peeled apples
1 c. chopped nuts, optional

Method

Mix dry ingredients in a large mixing bowl. Stir in wet ingredients and blend well. Then stir in apples and nuts "if used". Pour into a greased and floured 9 inch tube pan. Bake at 350 degrees for 60 minutes or until cake tester comes out clean. Cool 10 minutes, remove. Serve warm or cool. You can sprinkle confectioners' sugar.
