Difficulty: Easy - for beginners


10 cups thick rolled oats
2 cups unsweetened shredded coconut
2 cups walnut pieces
2 cups cashews
2 cups slivered almonds
1 cup pumpkin seeds
1 cup flax seeds
1 cup raisins
1 cup honey
1 tsp. almond extract
1 cup hot water
1/2 cup sunflower seeds


In a large bowl, combine the oats, coconut, nuts, raisins, and seeds (excluding sunflower seeds). In a smaller bowl, whisk the hot water into the honey and add the almond extract - mix well. Pour the honey mixture into the large bowl of dry ingredients and mix until everything seems to be coated.

Spread the mixture evenly onto 2 large baking sheets and bake at 350 degrees for 1 hour and 20 minutes. After each 20 minute interval, use a spatula or wooden spoon to stir the granola around for even browning/toasting.
Once the granola is finished, remove from oven and stir in the sunflower seeds. For a sweeter granola, drizzle agave nectar over the warm granola and toss.

Allow the granola to cool before storing in an air-tight container.
