Pistachio Cookies

Recipe by Karri Hoyt Rose way back from High School!! This is an absolutely fabulous cookie.

Difficulty: Easy - for beginners

1 Pkg Yellow Cake Mix
1 Pkg Instant Pistachio Pudding
1/2 C. Oil
3 TBSPN Water
2 Eggs
1/2 C. Coconut, shredded


Mix all ingredients together. Put 1 TBSPN of dough on cookie sheet and bake at 350' 8-10 minutes. Just until the tops have a touch of gold coloring. Let cool and transfer to cooling rack.
