2 Hatch Green Chiles
1.5 cups balsamic vinegar
1/2 cup water
1 tablespoon Paprika
1 tablespoon Garlic powder
1/2 tablespoon salt
1/2 teaspoon freshly ground black pepper
Mix all ingredients except for the chiles and bring to a boil. Meanwhile, roast the peppers over an open flame or under the broiler until the skins char and blister. place peppers in a bowl and steam for 3 minutes. Peel and seed peppers.
Blend vinegar mixture and chiles until very smooth. Bottle and chill the sauce.
