Cornbread

Simple cornbread that uses both yellow and white corn meal like my mother used to bake.

Ingredients

1 Cup Yellow Corn Meal
1 Cup White Corn Meal
1 Cup Flour
1 teaspoon Soda
1 & 1/2 teaspoon Salt
2 teaspoon Baking Powder
1 Tablespoon Sugar
2 Eggs
2 Cups Buttermilk
10 Tablespoons Corn Oil

Method

Preheat oven to 375 F
Mix Buttermilk, 8 Tbs Corn Oil and Egg together in a mixing bowl
Mix in the Corn Meal, Flour, Soda, Salt, Sugar and Baking Powder

Next, cover the bottom of a cast iron skillet with about 2 Tablespoons Corn Oil. This is what makes the corn bread a little crunchy around the edges (the mark of a good corn bread.) Place skillet in the pre-heated oven a few minutes. Once the oil and skillet are hot pour your corn bread batter in and then place this all in a 375 degree oven and bake for 20-25 minutes. Once it is done the top should be slightly brown.
