Tilapia, filet halves
2-3 TBSP Olive Oil (3 TBSP when cooking 4 fish filets)
Cajun seasoning mix, dry
White Cooking Wine
Use a non-stick skillet with a lid.
Spray margarine/butter on bottom of pan; add olive oil and set pan to warm on med/hi heat (Do not allow oil to get hot). Place tilapia in pan. Gently pour white cooking wine onto tilapia filets (wine will overrun onto pan), spray with margarine, and generously sprinkle with cajon seasoning mix. Turn heat to med; cover with lid and allow to cook until done. Do not turn the filets while they are cooking. Once done, serve with steamed rice (white or brown).
