Baked Custard with Strawberries

old fashioned custard baked with fresh strawberry slices

2 1/2 cups milk scalded (I use skim)
3 eggs
1/3 cup sugar (I use Splenda)
1 t vanilla extract
pinch of salt
1 cup sliced strawberries
nutmeg freshly ground


-preheat oven to 350 degrees F
-grease 6 ramkins
-scald milk, I heat it in the microwave
-in large bowl, wisk eggs
-add sugar or splenda, vanilla and salt and wisk
-keep wisking and slowly pour in the scalded milk. Wisk well.
-divide strawberry slices into the 6 ramkins
-ladle the egg mixture into the ramkins and sprinkle with nutmeg.
-place ramkins in a 9"x13" baking pan, fill pan about 1/2" with very hot water
-carefully place in oven and bake for 45 mins or until a knife inserted not quite in centre comes out clean
-cool to room temperature or chill before serving

*I have also made this in a casserole dish. Place the dish in the 9"x13" pan with hot water and bake for about 1hr or until knife inserted close to centre comes out clean.

*you can also use bananas in place of the strawberries.
