All organic when possible!
1 prebaked 9" pie crust (I use a premade one from the co-op that is Organic, whole grain)
3 egg yolks, beaten
1 c. rapadura (If you are concerned about this flavor, you can do half organic white sugar, but do try to convert to just rapadura)
3 tbsp cornstarch
1/2 c. unsweetened cocoa powder
1/2 tsp salt
3 c. milk (I have successfully substituted coconut milk (carton not can) for this for those doing dairy free, just add about 1/2 c less)
1 tbsp butter or coconut oil
1 1/2 tsp vanilla
1. In a large mixing bowl, cream together egg yolks and rapadura. Mix in cornstarch, cocoa powder, and salt. Add milk and stir gently.
2. Pour mixture into a large saucepan and cook over medium heat, stirring constantly, until boiling. Remove from heat. Stir in butter or coconut oil and vanilla extract. Cool slightly, then pour mixture into pastry shell. Chill before serving.
3. If desired, garnish with whipped cream made from organic whipping cream sweetened lightly with agave nectar.
