3 tablespoons salt
1/4 cup chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
6 pounds beef ribs
Combine spices to make Tex-Mex dry rub
Preheat the oven to 300F. Cut the rack into individual ribs.
Lay the ribs, fat side down, in two 12 x 9 x 2 1/2 inch baking pans. Add 1 cup water to each pan. Bake for 2 hours.
Increase the oven temperature to 450F. Turn the ribs meat side up. Sprinkle each rib with 1/4 teaspoon dry rub. Return to the oven and back for an additional 45 minutes until dark and crispy.
