Cuban Sandwich Casserole

Casserole using Cuban Sandwich ingredients. Freeze leftovers for future meals.

Cooking time: 30 minutes

Difficulty: Easy - for beginners
Serves: 4


2 links mild Italian sausage, or apple chicken sausage
4 oz cooked ham cubes (or leftover pork chops, cubed)
1/4 bunch fresh cilantro, coarsely chopped
4 oz Swiss cheese, cubed
1 6.9 oz box chicken Rice a Roni or equivalent
1/2 tsp Goya Complete seasoning
1/4 cup dill relish
2 tbsp extra virgin olive oil
1 tsp mustard
2 1/2 cups water


Recipe is from Publix grocery store.

Preheat large saute pan on medium-high heat 2-3 minutes.
Place oil in Pan, add sausage and ham. Cook 2-3 minutes or until lightly browned.
Stir in seasoning from Rica a Roni, Complete seasoning,and 1/2 cup water.
Cook and stir 1-2 minutes.
Stir in rice, relish, mustard, 1 tbsp cilantro, and remaining 2 cups water.
Cover, reduce heat to low, and simmer 20-22 minutes, or until rice is tender and water is absorbed.
Stir in cheese and remaining 1 tbsp cilantro.
Serve with salad and Cuban bread.
