Delicious Chicken Dinner

Ingredients

3 skinless, boneless chickn breasts
2 tbs. canola oil
1/2 chopped onion
1 14 oz. french style green beans
1 14 oz. can tomatoes
1 14 oz. can carrots
1 large potato cut into 3/4 in. cubes
1 c. uncooked rice
1/2 tsp. salt
1/4 tsp. pepper
1 c. water
1/2 c. finely shredded cheddar cheese

Method

Cut chicken into bite size pieces. Heat oil in a large skillet over medium heat. Add chicken and onion. Saute for about 3 mins. Add potatos and rice. Simmer on low for about 15 min. Add tomatoes, carrots, green beans, salt and pepper. Cook covered over medium-low heat, stirring occasionally, for 15 mins. or until potatoes and rice are tender. Sprinkle chicken mixture with cheddar cheese. Let stand covered for 5 mins.
