One block Extra Firm Tofu
1 cup Fresh mushrooms
1 Small Onion
4 Medium Scallions
1 Tsp. Fresh crushed garlic
2 Tbsp. Lite soy sauce
1/2 Tbsp. Teriyaki Sauce, Lite is perferred
4 Cups Fresh Baby Spinach
4 Bestlife Sundried Tomato Light Flatout Wraps
Prep the night before: Press and Drain tofu for at least 3 hours. Once drained, cube into bite sized or smaller pieces.
Place cubes in a large bowl, add one half of the Lite Soy Sauce, Garlic and Teriyaki Sauce. Mix well, you may also add a squueze of lemon or a bit of water to incorporate it better. Cover and store in fridge.
For lunch or dinner... Prep all veggies,
Rinse and dry Spinach, set aside.
Halve and slice onion.
Slice or chop scallion.
Wash and slice mushrooms.
Add onion and scallions to hot pan with a small amount of water. Sautee until wilted, add fresh herbs or pepper to taste. Add mushrooms and the remaining Soy, Teriyaki and Garlic... mix well. Stir often at Med-High heat about 3 minutes. Add marinated tofu cubes, mix well and allow mixture to come up to temp... cook for about 5 minutes. (add water if mix dries.)
Lower tep to Meduim, add a touch of water and cover pan, begin to prep wraps.
You can also pan fry the tofu separately if you would like a crunchy texture on the outside of the tofu.
One wrap per serving
One cup fresh spinach per wrap
Layer 1/4 of the cooked tofu mix to each wrap
Fold and enjoy!!!!!
