Jenn's Bi-Color Potato Bake

2 large Russett Potato(skin on)
2 Medium to Large Yams(skin on)
1 Med-lg Onion
1/2 Tsp. Mrs. Dash Herb Blend


This recipe Makes about 6 servings
Pre-heat oven to 350 degrees.

Wash potatoes, Cut all into small cubes or dice.
Chop or dice onion, small size dice.
Line a baking sheet with parchment paper/or foil line and lightly spray with Pam spray.
Mix onoin and potatoes on pan and evenly distribute.
Sprinkle herb mix evenly over potatoes and onions, then lightly spray with Pam cooking spray.

Bake for 35-45 minutes, watching carefully, taking them out as soon as potatoes are tender.

I transfer to a bowl for the table and allow the steam and flavors to incorporate even better.

You can add bocon, ham or chicken to make it a main dish which we have done many times.
