Tomato- Pepper Salsa

Serves: 21/2 cups


1 large red sweet pepper, seeded and coarsely chopped.
1 small red onion, peeled and quartered
1 small bunch fresh parsley
2 large tomatoes
3 Tbl. red wine vinegar
1 Tbl. fresh lemon juice
1 tsp. ground cumin


1- Place the sweet pepper, onion, and parsley in a food prcessor. Pulse until finely chopped.

2- Cut the tomatoes in half crosswise and squeeze out the most of the juice and seeds. Chop the tomatoes coarsely, then add to the onion mixture in the food processor. Pulse several times to make a coarse puree. Transfer to a medium bowl and stir in the vinegar and lemon juice.

3- Place the cumin in a small skillet and stir over low heat for 2-3 minutes, or until the cumin just starts to smoke. Stir into the salsa and season with salt and pepper. Cover and refrigerat until needed.
