fire roasted chicken & lime mexican soup

1 lb chicken breast or tenders
1 can black beans
16 oz. fire roasted (fresh) salsa
red/yellow peppers (your choice)
1 yellow onion
2 zucchinis (optional, recommended)
southwest seasoning
salt, pepper
cumin (optional)
cayene pepper (optional)
2 tblsp olive oil
2 c. chick broth or stock (or more, depending on how thick u want it)
2 or 3 limes (fresh, for juice)
cilantro (fresh)
guac (garnish optional)
mex style cheese (optional garnish)


brown chicken in your stew pot with the olive oil. season the meat with your seasonings.

add zucchini, cook for 2 or 3 minutes.

add the rest of your chopped vegetables & beans

add the salsa

stir really well, bring everything to med high temp

add chic broth

(i add cumin and other spices to taste, sorry no measuring allowed)

bring to a full boil and then cover, simmer on med-low for about 30 min to blend flavors.

5 min before serving add the juice of the limes & all cilantro. let mix well. serve right away

top with cheese and guac.
don't mess with adding stupid carbs like chips or anything. just enjoy it!
