Italian pasta one-pot dish with tomatoes, beans, sausage

2 tbsp oil
1 c. onion, chopped
1/2 c. celery, diced
3/4 c. carrot, chopped
2 cloves garlic, minced
1 c. canned crushed or diced tomatoes
1/2 tsp. salt
1/4 tsp. pepper
2 cans dark red kidney beans
1/2 c. ketchup
Jalapeno peppers, chopped (optional)
2 c. pasta, cooked
1 lb. smoked sausage


Add onion, celery, garlic, and carrots to oil in large saucepan or Dutch oven. Saute until soft. Add tomatoes, salt, and pepper; stir. Add beans, ketchup, jalapenos, plus 3 or more cans of water.

Bring all ingredients to a boil. Add cooked pasta (slightly undercooked). Lay whole smoked sausage on top of mixture. Cover and let simmer 30-45 min. Remove sausage and slice 1/2" diagonally; return to saucepan. Stir.

Good served with corn muffins or cornbread (Jiffy)
