Be Cool Peppermint parfaits

Chill out with a little peppermint on a winter day. These too-cool parfaits are sure to have you shaking your tail feathers.

Ingredients

1 4-serving size pack. of fat-free reduced calorie chocolate -flavored instant pudding mix.
2 c. fat-free milk
1/2 of an 8oz container frozen light whipped dessert topping, thawed
1/8 to 1/4 tsp. peppermint extract
Green or red food coloring (if you like)
Green-or-red sugar and /or multicolored candy sprinkles (if you like)

Method

Put pudding mix and milk in the larg. bowl. Whisk about 2 min. or until smooth and mix starts to thicken.
Save step 3.

Put dessert topping and peppermint extract in the med. bowl. Stir with the wooden spoon to mix. If you like, stir in enough food coloring to tint the mixture.
Divide pudding among the dessert dishes. Top with the topping mixture. If you like, sprinkle w/ sugar and/or sprinkles.
Cover with plastic wrap. Chill in fridge for 2hrs before serving.
