Dietary guidance: v
1 & 1/4 pound egg noodles
1/2 cup plus one table spoon unsalted sweet butter
2 well flavored cooking apples
1 cup cottage cheese
3 to 4 eggs lightly beaten (we used 4)
2 teaspoons ground cinnamon
1 & 1/4 cups sugar
2 to 3 handfuls of raisins
1/2 teaspoon baking soda
salt to taste
Preheat oven to 350 degrees F. Cook the noodles in salted boiling water according to the directions on the packet, or until just tender, then drain.
Melt the butter, then toss it with the noodles.
Coarsely grate the apples and add to the noodles, then stir in the cottage cheese, eggs, cinnanmon, sugar, raisins, baking soda, and a tiny pinch of salt.
Tip the noodle mixture into a deep rectangular ovenproof dish 15 by 8 inches and bake for 1 & 1/4 hours or until browned and crisp. Serve immediately. This kugel is also good served cold.
