4 boneless, skinless chicken breast
4 to 5 ounces blue cheese crumbles
a handful arugula leaves from bulk bins, chopped
4 slices of bacon
2 pounds baby potatoes, halved
1 pound thin green beans
2 vine tomatoes, halved lenthwise, seeded and thinly sliced
Leaves fron 4 fresh thyme sprigs
3 tbls. evoo divided
4 scallions, finley chopped, whites and greens
1/4 c. chicken stock
Preheat oven 425 degrees F.Cut into thick end of chicken and make an incision in the chicken.Season w/ pepper.Combine cheese with arugula and spinach and stuff.Spiral-wrap chicken with bacon.Roast20-25min or fully cooked.Boil water for potatoes, salt the water. In a pot, bring water to boil and add beans and lower heat simmer 5min.Drain and add thyme,1tbl. oil salt and pepper,tomatoes. Drain water from potates add 2tbls oil,scallions,chic.stock. salt and pepper Toss to coat 1 min.
