My Favorite Salsa

I like my salsa to have some fresh elements but not taste like eating a plant. Consistency is key so some elements are pureed and some are just finely chopped. Tomatillos are awesome so those are in there too.

Preparation time: 10 min
Cooking time: 10 min

Difficulty: Easy - for beginners

12 fresh tomatillos
1 fresh tomato
4 cloves of garlic
1 jalapeno
1 serrano chili
1/2 of a white onion
1/2 of a red onion
salt,pepper and lime juice to taste


-peel and rinse tomatillos and cut them in half
-remove stem and cut the tomato into quarters. remove most of the ribs, seed and liquid
-roast the tomatillos, tomato, garlic, jalapeno and serrano chili
-puree the roasted ingredients
-finely dice the onions
-stir together the pureed and diced ingredients
-season to taste
