Difficulty: Medium - experience needed
1/2 c. fresh or frozen blueberries
1 1/2 c flour + 2 T. flour
1/2 Cup Oats (Quick cook or regular)
1 t. baking soda
1/4 t. salt
1/2 c. shortening or butter
1 c/ white sugar
2-3 ripe bananas
Preheat oven to 350.
Dredge blueberries in 2 T. flour. Mix with oats, 1 1/2 c. flour and salt.
Separately, cream shortening, gradually adding sugar, beating until light and fluffy. Add eggs one at a time, beating well after each. Stir in mashed banana. Add blueberry mixture to creamed mixture and stir until just moistened. Spoon into prepared mini muffin ti.,
Bake 20 minutes or until wooden toothpick comes out clean. Remove, cool and serve with whipped cream cheese or butter. Yummy!
