Two medium or three small leeks, peeled and sliced into rounds
4 rashers of smoked bacon, cut into strips
Small tub/half a cup of cream
Glass of white wine
250g hard cheese (Emmental, cheddar, Gruyere ... anything that grills well)
1 level tablespoon flour
Salt and pepper
Sautee the sliced leeks and bacon strips in a little oil over a low heat.
When the leeks are soft, sprinkle in the flour and stir till it has been absorbed in the oil and bacon fat.
Add the wine, stir, cover and simmer for 5 minutes.
Season to taste, then stir in the cream.
Put the whole lot in a shallow ovenproof dish and cover with sliced or grated cheese.
Cook under a hot grill till the cheese is bubbling.
