Heather's Cajun White Beans and Smoked Sausage

Budget friendly recipe for Great Northern Beans and Smoked Sausage that is made in a crockpot.

Preparation time: Prep- Overnite or 1hr quick boil
Cooking time: 5hrs HIGH or 10hrs LOW

Difficulty: Easy - for beginners
Serves: 4+


1lb bag of Great Northern White Beans
2 TBS EVOO ( didn't have so used bacon grease from fridge instead)
1 onion chopped
2 bay leaves
2 tsp of Italian seasoning
1 TBS garlic powder
2.5 tsp of Tony's Cajun Seasoning salt or any other Cajun Season Salt
1.5 tsp dried Thyme
1 lb Ekrich Skinless Smoked Sausage diced
4 c water
2 c Chicken stock


Overnite Method:
1lb of Great Northern Beans (the white kind)
Rinse and pick out the baddies
Pour into your crockpot and cover with cold water
let sit overnite.... I actually put them in at noon on Monday and let them sit overnite to soak .... started them up around 8:30am on Tuesday morning.

Quick Boil Method:
1lb of Great Northern Beans (the white kind)
Rinse and pick out the baddies
place in stock pot and cover beans with at least 3in of water
bring to boil, boil for 2 mins, remove from heat and cover
let sit for 1 hr

Drain off beans and rinse. Turn your crockpot on HIGH and let it get hot with the lid on while you prep the rest of your ingredients.

Chop onion and sausage. Add EVOO or bacon grease to bottom of crock. IF using bacon grease I recommend to stir it around until it's melted :)

Add onion and sausage. Next add your drained/rinsed beans, water, ck stock, then all of your seasonings. Put the lid on it and cook on HIGH for 4-6 hrs, then kick it down to LOW until ready to eat. Right before you dish out, remove bay leaves.

I made a pot of white rice and a skillet of Sweet Yellow Cornbread to go with :)

I know you could do the same with pintos, red or probably even black beans. If you want more of a Mex flavor, change up your seasonings... instead of Italian seasonings, use Chili powder... cumin for the thyme. Keep the garlic and Tony's the same.
