Green Spaghetti

Kelly Townsley made this for last night and it was delicious! Served with spinach salad and sour dough garlic bread :D

Difficulty: Easy - for beginners


3-5 raw jalapeno chiles

5 large green bell peppers

2 C water

1 1/2 C butter or margarine

Chicken base or bouillon

Garlic powder to taste

Cooked Spaghetti

1-2 C shredded Monterey Jack cheese

You might add a cup or so of cream


Thoroughly blend, in high speed blender (she used a Vitamix blender) raw bell peppers, 3-5 raw jalapeno chiles with water (Kelly sauted the bell peppers and 4 jalapeno chiles BEFORE blending, and it had a nice kick to it). Saute pureed peppers with butter or margarine, season with chicken base or bouillon, and some garlic powder. Simmer for 3-5 minutes. Add sauce to 1 1/2 cups parmesan cheese and 1-2 cups shredded Monterey Jack cheese. You might add a cup or so of cream.
