Ingredients

1c onion, diced
1/2c green pepper, diced
1/2c celery, diced
1/2 chili (jalapeno, etc.)
2 cloves garlic, minced
1lb meat (12oz bags of bay scallops for 8 bucks are awesome)
1/2c Dark Roux (see other recipe)
1/2c stock (chicken works good)

=== Seasoning ===
2 bay leaves
~1t Thyme
~1T Paprika
~2T Salt & Pepper, OR Tony Chachere seasoning

Method

1. sweat the veg in a hot cast iron skillet with a little oil, and half of the seasoning
2. Add the garlic and chili, sweat more
3. add meat & rest of seasoning, cook
4. add roux, mix in thoroughly
5. add stock, mix until smooth
6. Simmer a bit and eat over rice
