8 med. potatoes, peeled, and cut into thick slices
6-8 oz cheddar cheese, shredded
about 2 cups milk- I used 1%
1 med onion, sliced
salt and pepper
Boil the potatoes until they are half-cooked. Drain and set aside. In a saucepan, melt butter, and whisk in flour. Cook for a minute or two, then gradually add milk, continually whisking until you have a thick sauce. This will take time, as you want to bring the milk up to a boil with each addition. You may not need all of the milk. Season with salt and pepper and take off the heat.
In a Med. casserole, put in 1/3 of potatoes, 1/3 of the onions, 1/3 of the cheese, and 1/3 of the white sauce. Keep layering and finish with a little cheese on top.
Bake, covered, at 375 until the sauce is bubbling, and the onions are cooked through- about 45 min. Let cool for a few minutes after you take it out of the oven.
