Beef with Mango Stir Fry

8 oz (225 g) Fillet of beef
1 large mango
4 tbsp. oil
1 tbsp. fresh, shredded ginger
1 shallot, finely sliced

1 tbsp. white wine
1 tbsp. soy sauce
1 tsp. corn flour
1/4 tsp. sugar
1/4 tsp. fresh ground pepper


1, Cut beef into thin bite-sized pieces.

2. Blend together the ingredients for marinade, add the beef and leave for 20 min.

3. Peel & slice the mango.

4. Set wok over high heat, add oil and wait until almost smoking. Reduce heat to moderate add beef & ginger and stir fry for 1-2 minutes. Remove beef and ginger with slotted spoon.

5. Toss mango slices in hot oil for a few seconds return beef & ginger to the wok, add shallots. Stir fry for a further few seconds. Serve immediately over rice or noodles.
