Succotash Soup

A soup version of a Native American mainstay

Preparation time: 15 minutes
Cooking time: 5 minutes

Serves: 2-4

1 box of frozen lima beans
1 large can of cream style corn
a pinch of chili powder


Boil the lima beans until hot.
Cool off by rinsing in cold water
Open can of cream style corn and empty into a blender
Shell the lima beans so that you remove the skin and put shelled beans into the blender with the corn
Blend on medium speed until smooth and looks fully blended
Heat over medium heat stirring regularly to prevent sticking and burning
Serve immediately with a little sprinkle of chili powder as garnish
