Chocolate Souffle

2 tablespoons butter
1/2 cup sugar
1 tablespoon flour
1/3 cup milk
1 tablespoon cocoa
2 eggs
1 teaspoon vanilla
dash of salt


Butter the bottom and sides of a 3- to 4-cup souffle dish or baking dish, using 1 tablespoon of the butter. Coat bottom and sides with 1 tablespoon of the sugar. Melt the remaining butter and blend in the flour. Add milk gradually and cook, stirring until thick and smooth. Stir in the cocoa and 2 tablespoons of the sugar. Separate the eggs and beat yolks until thick. Add a little of the hot mixture to the yolks, and then combine the two mixtures. Cook about 1 minute over low heat, stirring constantly, until it is thickened. Add vanilla. Beat egg whites with salt until foamy, add remaining sugar and continue beating until stiff peaks form. Add the chocolate sauce into the beaten whites. Turn into the prepared souffle dish and bake at 400 degrees for 25 minutes.
