Chocolate Cherry Meringue Pie

1/2 cup butter, at room temperature
1 1/2 cups flour
1 cup sugar
1 egg
1 ounce unsweetened chocolate, melted
2 tablespoons maraschino cherry juice
1 teaspoon soda
1/2 teaspoon salt
1/2 cup drained maraschino cherries, coarsely chopped
1/2 cup walnuts. chopped
meringue topping
additional cherries for garnish


Cream the butter with the sugar until blended; add egg and beat until fluffy. Stir in the melted chocolate. Measure cherry juice into a cup and add buttermilk to equal 1 cup liquid. Stir soda and salt into creamed mixture, then add the flour alternately with the buttermilk mixture. Mix until smooth. Fold in cherries and walnuts. Turn into buttered and floured 9" square pan. Bake at 350 degrees F for 45 - 50 minutes or until the cake tests done when skewed in the center. Remove from pan and cool slightly. Place on cookie sheet and top with meringue, piling it high. Turn oven heat down to 200 degrees F and bake until the the meringue is cooked through and beginning to brown on the tips of the meringue, about 5 to 8 minutes, Cool. Decorate with cherries.
