Fettuccine with Tasso

Tasso is a spicy, peppery, garlicky version of smoked pork used in many cajun dishes. I always bring home some when I visit Louisiana. Smoked country ham can be substituted.

Cooking time: approx 30-35min

Serves: 6


8 ounces fettuccine
1 stick (8 tablespoons) butter
1 cup chopped onions
1/2 cup bell peppers
1/2 cup chopped celery
1 teaspoon minced garlic
1/2 pound tasso, thinly sliced (smoked country ham can be substituted)
1/2 teaspoon dried parsley flakes
1/4 teaspoon dried thyme
1 cup half-and-half
2 teaspoons grated Parmesan cheese


Boil the fettuccine according to package directions. Drain and set aside. Melt the butter in a large, heavy pot over medium heat. Add the onions, bell peppers, celery and garlic. Cook, stirring occasionally for 15 minutes. Add the remaining ingredients and simmer 5 minutes. Serve warm over fettuccine.
