4 T. peanut or vegetable oil
4 c. cooked rice
2 eggs, slightly beaten
1/4 c. minced onion
1 1/2 tsp. soy sauce
1/4 tsp. ground black pepper
1/4c. - 1/2 c. cooked (or frozen) peas (optional)
1/4 c. cooked, diced carrots (optional)
May add your choice of cooked, diced shrimp, pork or chicken, vegetables or small peppers if desired. I have added peas, broccoli, carrots, mushrooms, and ham in the past.
Heat oil in large skillet, add rice, onion, soy, and pepper and any desired vegetables. Cook over medium heat, stirring often for about 6 minutes. Add the eggs and stir briskly so they cook and break into small bits throughout the rice. As soon as the egg is set, remove and serve.
